Chicken breast with mushrooms

Usual recipe for those who do not have time and has a few scroungers for dinner.

 As usual you came back home after work or after university or after whatever the neurons have engaged so you are tired and with little desire to cook. One might say “I almost order a pizza” but then, the intercom rings and our dear friend will surprise you by inviting himself for dinner! 

My quick and scenic advice for a great and tasty dinner? Chicken breast with mushrooms!

petto di polloINGREDIENTS for 2 people:

  • 400 gr of sliced ​​chicken breasts (about two per person)
  • 1 mushroom bowl
  • a little parsley
  • EVO oil q.b
  • 1 clove of garlic
  • chili pepper
  • salt and black pepper q.b
  • rosemary (two branches)
  • 1 glass of white wine

Against every culinary process and chefs, I propose you my fast and personal procedure … you have the choice to share it or not with respect to traditional recipes.
  1. First of all rinse the mushrooms under running water. (If you’ve bought – and I hope – those already cut just a rinse under running water, otherwise if they are whole let them in water with a little soda for 10 minutes, then rinse under running water and affect)
  2. Take a pan, put 3 tablespoons of oil, a clove of minced garlic, a sprig of rosemary, a handful of freshly chopped parsley and a dried red pepper.
  3. Turn the heat on to medium heat.
  4. Add a pinch of black pepper.
  5. Is garlic blonde? (In the sense that it became light yellow and not that it did the sunlight …) Add the mushrooms and put the lid.
  6. Cook for about 20 minutes, stirring occasionally to prevent them from burning or sticking to the pan.
  7. At this point add a glass of white wine.
  8. DO NOT put the lid and let the white wine evaporate.
  9. Taste the mushrooms and if they are soft then they are cooked.
  10. ARE NOT cooked? Then add a glass of hot water.

   Are they cooked? You can open the bottle of wine and take a sip in company. [/ Su_highlight]

  1. Take chicken breasts.
  2. Beat them with baking paper. How you do it?
  3. Take a sheet of baking paper and, as the grandmothers did, close the paper on itself with the chicken slice in the middle. Beat with a meat mallet.
  4. If you do not want to beat the chicken, nothing happens.
  5. Add at this point the chicken slices and always over medium heat put the lid and cook for about 10 minutes.
  6. Add more parsley and a touch of black pepper.
  7. When the meat is ready (to understand it you can cut the meat with a pair of scissors and understand if it is cooked!)
  8. Turn off the heat.
  9. At this point it is more or less captivating (ie at least the mushrooms go over the meat!)
  10. Sit back and savor the dish.
